Back to School: 8 Days of Lunchboxes

Top shots of bowls of snacks

Let me start this post by saying that as parents I don’t think we need to be packing gourmet Pinterest-worthy lunchboxes every day, we are pressured enough as it is! However, I do think that variation and balance are important, and so the purpose of this post is simply to put lots of ideas out there so you can pick and choose the components that you think your children will enjoy and that are do-able in your home.

This scrumptious tart is a delightful combination of tastes and textures. Golden, flaky puff pastry is topped with flavourful tomato pesto, a medley of roasted vegetables and melty mozzarella – it’s the perfect union of crunch and flavour. Are you hungry yet?

Ginger and dark chocolate snack bars

I had to play around with this recipe a few times to get it just right, and I’m so glad I persevered because these ginger and dark chocolate bars are absolutely delicious! They’re chewy and oaty with a tasty hint of ginger. The dark chocolate layer at the bottom finishes them off perfectly. I would definitely classify these as a treat snack, and they are rather lovely as an afternoon pick-me-up.

The busy year end season has definitely started and now more than ever I need recipes that I can get on the table fast. Did I mention that they need to deliver on flavour too? The warmer weather means that smoothies are featuring more regularly on our breakfast and snack menu at home, and chocolate smoothies (not surprisingly) are my favourite. Not only are they delicious but they’re filling too, not to mention filled with wholesome ingredients – love it!
