Date and cinnamon granola

Granola is an absolute cupboard and breakfast staple around here, and I love trying out different ingredients and making each batch a little different. Dates are a fabulous addition to homemade granola – after half an hour in the oven they’ll be chewy and caramelly, yum! There are the usual nuts and seeds included here (use whichever ones you like but pecans and pumpkin seeds are particularly good in this recipe) and I’ve added a good helping of coconut flakes to the mix too. Breakfast is served!

Dukkah and parmesan chicken tray bake

Dukkah chicken and vegetable tray bake

Last month I was invited by Sarah Baade over at Slice of Honey to collaborate on a sheet pan dinner project. We are very fortunate not to have any food allergies in our family but lately I have been inspired to try new ingredients and find healthier alternatives to use at home everyday. This recipe was the result of some playing around I did a few weeks ago.

Walnut, pecan and cranberry cake

A few years ago on my birthday I visited the Cape Town Good Food Show where I was fortunate to meet Gordon Ramsay. Gosh, as I sit here listening to the washing machine whirring away in the background, princess stickers strewn on the floor under my desk and my baby boy napping down the passage, going to shows and meeting celebs seems like another lifetime! Gordon was doing a book signing and this is where I picked up a copy of “World Kitchen”. The book is a collection of recipes from all over the world including France, China and America. It is one my favourites in my collection and everything I have tried so far has been delicious.
