We are counting down the sleeps until Christmas Day and there’s just time for one more Christmas recipe and my last post for 2018! This festive showstopper looks beautiful on the table and makes a decadent and delicious dessert. What is it exactly? My version is essentially a chocolate swiss roll filled with a walnut and cream cheese filling, smothered in chocolate icing and topped with chocolate curls. And in the mandatory log format! (Apologies in advance to your dentists and personal trainers… #sorrynotsorry.)

This is the kind of quick and easy treat that I love snacking on in the afternoon when I need an energy boost and feel like a little something sweet but guilt-free. They are so good!

For most parents it was back to school today and that means having to think about lunch boxes again. I still have a couple of days to go before my littlies go back and I am already dreading them! So today’s recipe for sugar free banana muffins will hopefully provide a little inspiration and be something that the kiddies (and you!) will enjoy as a school or afternoon snack.

Spiced walnut palmiers (with video)

Walnut palmier cookies

I put this recipe together for the Expresso Show as part of their frugal feasting feature last month. Puff pastry was our star ingredient and we made mini chocolate and almond croissants, tomato and chevin tarts (look out for the recipe next week) and these spiced walnut palmiers. They look like a bit of a fiddle but it is actually easy to make palmiers from scratch, and they are oh so moreish!

Walnut, pecan and cranberry cake

A few years ago on my birthday I visited the Cape Town Good Food Show where I was fortunate to meet Gordon Ramsay. Gosh, as I sit here listening to the washing machine whirring away in the background, princess stickers strewn on the floor under my desk and my baby boy napping down the passage, going to shows and meeting celebs seems like another lifetime! Gordon was doing a book signing and this is where I picked up a copy of “World Kitchen”. The book is a collection of recipes from all over the world including France, China and America. It is one my favourites in my collection and everything I have tried so far has been delicious.

Chocolate, walnut and cranberry brownies

Last Sunday the 18th of May was World Baking Day, and I was invited by Stork to pledge to bake for someone special. About a week later two friendly chefs arrived at my door bearing a hamper filled with all the ingredients I would need to make a batch of delicious chocolate brownies to mark the day. I thought this was a fantastic idea and was more than happy to get involved (although it doesn’t take much to convince me to bake!).
