Another Easter holiday has come and gone and I hope you had a lovely one! We managed to escape up the coast for a few days of beach bliss but it’s back to business now and the never ending lunch boxes, laundry and loaded inbox. (Take me back to the beach!) This is a wonderful, easy recipe if, like me, you are craving veggies and healthier meals after enjoying all of those Easter holiday treats! May I present my crustless roasted vegetable quiche.

Following on from our puff pastry theme from last week, these moreish savoury tartlets are incredibly easy to put together and totally delicious! Yet another way to use puff pastry and I am not ashamed to say that I always keep a roll of the ready made stuff in the freezer for quick snacks like this.

I was recently invited onto the Expresso Morning Show to present three different, easy recipes with one common ingredient. I chose dates as my star ingredient and wanted to include a baking recipe in one of the cooking segments. That was the inspiration behind these date muffins.

My regular readers will know that I love a fully loaded treat, but lately I have been on the look out for recipes that are both delicious but free from things like sugar and gluten. I notice such a difference in my energy levels when I avoid these (no more mid afternoon slumps), not to mention feeling more clear headed. So I was intrigued when my son’s teacher told me about this amazing sugar free chocolate mousse – of course I had to try it!
