I put this recipe together for the Expresso Show as part of their frugal feasting feature last month. Puff pastry was our star ingredient and we made mini chocolate and almond croissants, tomato and chevin tarts (look out for the recipe next week) and these spiced walnut palmiers. They look like a bit of a fiddle but it is actually easy to make palmiers from scratch, and they are oh so moreish!

It has been a while since I worked on a muffin recipe and I am rather pleased with this particular one. I was recently invited onto the Expresso Morning Show to present three different, easy recipes with one common ingredient. I chose dates as my star ingredient and wanted to include a baking recipe in one of the cooking segments. That was the inspiration behind these date muffins.

My regular readers will know that I love a fully loaded treat, but lately I have been on the look out for recipes that are both delicious but free from things like sugar and gluten. I notice such a difference in my energy levels when I avoid these (no more mid afternoon slumps), not to mention feeling more clear headed. So I was intrigued when my son’s teacher told me about this amazing sugar free chocolate mousse – of course I had to try it!

The lightest lemon squares (with video)

The other day my daughter came home from school and (after proudly showing me the red autumn leaves she had found in the playground that day as well as an energetic, full length rendition of “The Farmer in the Dell” – oh to be four again!) told me thatย her class had celebrated a birthday that day and that the birthday boy had brought a lemon cake to school for everyone to share. It made me think of this recipe which is one of those that I have had for years, scribbled on a piece of paper and unceremoniously shoved inside a notebook. It is a fantastic recipe and worthy of a more permanent home here on the web and not just on a scrap of paper!

Date and nut balls (with video)

Warning: parental ramblings ahead! I am sure parents everywhere are breathing a collective sigh of relief as school resumes for the third term. If I am honest I actually quite enjoyed the 3 week break from lunchboxes, school runs and most of all the dreaded “lurgies” that always make their way home from the playground. Yes, the holidays can push any parent’s patience to the limit at times, but all too often I am reminded of how quickly time goes and that this chapter in our family journey is really so fleeting and special. Even when I am knee deep in stuffed toys, picking tiny bits of muesli off the soles of my feet (did I not just sweep that floor 5 minutes ago?!?) and answering the same question for the tenth time whilst pureeing a chicken and veggie concoction for the babe. All to the soundtrack of the washing machine and Disney radio. Special times, chaos and all!
