Coffee crumb sponge cake with whipped ganache

Easy coffee sponge cake recipe

We’ve just returned from a magical road trip from Cape Town to Botswana, and beyond! Thousand of kilometres, four countries and countless memories later, it’s been a little strange to settle back into our normal routine! Between unpacking bags and camping gear, tackling mountains of laundry and catching up on emails I found some time to test this recipe that has been sitting on my “must bake” list for quite some time.

Chewy oat, dark chocolate and sesame cookies

Oat and dark chocolate cookies

There are some recipes that feel made for winter, and these bakery-style oat cookies are one of them. When the cold weather hits all I want to do is flick on the oven and bake, are you the same? These rustic, chewy cookies with pops of rich dark chocolate are best enjoyed warm with a hot drink in hand, just what you want on a cold June day.

Plum squares

Apple and cinnamon is a flavour match made in heaven, and these muffins come together easily using ingredients that you’ll find in your pantry.

Marble loaf cake with coffee glaze

A photo of sliced vanilla and chocolate marble loaf cake with coffee glaze

This easy loaf cake is simple enough to whip up as a last minute tea time treat, and you can have a bit of fun creating a swirled effect with the vanilla and chocolate batters.  It’s made with ingredients that I always have on hand, love that! Let’s not forget the simple mocha glaze that goes on top (scroll down for a close up of that drip!), I’m here for all of it.

Orange and rooibos cupcakes

Rooibos and orange cupcake recipe

Hello from a very cold Cape Town! It’s been a crazy two weeks here trying to juggle distance learning, work and the usual day to day admin that needs to happen, and as a result it has taken me a while to get this post together. But I think these delicious cupcakes are definitely worth the wait.
