I remember baking and photographing this particular loaf on a grey and rainy winter afternoon. I’ve been baking up a storm this past week. We celebrated my daughter’s birthday over the weekend (which meant party cake and treats as well as cupcakes for school and home) and today Cupcakes and Couscous turns 7! Last year we celebrated with this caramel choc chip ice cream and this year I decided that some decadent chocolate ganache cupcakes were the perfect treat to celebrate this milestone.

Earlier this week I posted some photos on social media of a batch of biscuits I was making in the old “roll and fork” style (I was trying to create something that reminded me of the biscuits we enjoyed as kids). The image got a bigger response than anything else I’ve posted recently (you guys sure love your biscuits!) and it inspired me to put together another recipe round up – and this time it’s allll about cookies.

I have my four year old to thank for this easy ice cream recipe which was his idea! This is how it came about… every Friday my children’s school has an afternoon market and it has become tradition to go and buy a treat to celebrate the start of the weekend – ice cream is the firm favourite! There are always lots of delicious flavours to choose from and one Friday afternoon in the car on the way home it led to us having a discussion of which varieties the children would make if they had their own ice cream shop. After some ideas were thrown around my son then suggested that every time one of us has a birthday we should should make our own bespoke celebratory batch of ice cream with a different flavour (chosen by the birthday girl/boy) each time. I rather liked that idea but it was put on the back burner… until recently.
