CHOCOLATE & PEANUT BUTTER CHIA PUDDING
- 15ml (1 tbsp) cocoa
- 15ml (1 tbsp) peanut butter
- 15ml (1 tbsp) honey
- 1.25ml (¼ tsp) vanilla essence
- 250ml (1 cup) almond milk (or milk of your choice)
- 60ml (4 tbsp) chia seeds
- 15ml (1 tbsp) desiccated coconut
- Toppings: coconut flakes, cacao nibs (optional)
1.) Mix the cocoa, peanut butter, honey and vanilla essence in a small bowl.
2.) Add the almond milk and whisk. Add the chia seeds and coconut and mix well again.
3.) Pour into a glass and place in the fridge. After 20 minutes give the chia pudding another stir to break up any lumps. Refrigerate for approximately 2 hours or leave in the fridge overnight for breakfast the next morning. Top with coconut flakes and/or cacao nibs just before serving, if using.
This really is dessert for breakfast! Tasty indeed.
