Chocolate and peanut butter chia pudding

 

Here’s another make-ahead breakfast idea that you’ll love. Let’s just say that it lives up to it’s name, it’s so delicious that breakfast will feel like dessert! This easy chocolate chia pudding is made with peanut butter and coconut to make it extra satisfying and get your day off to a tasty and wholesome start.

CHOCOLATE & PEANUT BUTTER CHIA PUDDING

  • 15ml (1 tbsp) cocoa
  • 15ml (1 tbsp) peanut butter
  • 15ml (1 tbsp) honey
  • 1.25ml (¼ tsp) vanilla essence
  • 250ml (1 cup) almond milk (or milk of your choice)
  • 60ml (4 tbsp) chia seeds
  • 15ml (1 tbsp) desiccated coconut
  • Toppings: coconut flakes, cacao nibs (optional)

1.) Mix the cocoa, peanut butter, honey and vanilla essence in a small bowl.

2.) Add the almond milk and whisk. Add the chia seeds and coconut and mix well again.

3.) Pour into a glass and place in the fridge. After 20 minutes give the chia pudding another stir to break up any lumps. Refrigerate for approximately 2 hours or leave in the fridge overnight for breakfast the next morning. Top with coconut flakes and/or cacao nibs just before serving, if using.
