I remember baking and photographing this particular loaf on a grey and rainy winter afternoon. The chocolatey aroma wafting from the kitchen was just heavenly, and the wait while it cooled and was being photographed felt like forever. This simple chocolate loaf cake is a delight with its soft crumb and crunchy pops of pecan nuts, all slathered in velvety chocolate buttercream.

We are counting down the sleeps until Christmas Day and there’s just time for one more Christmas recipe and my last post for 2018! This festive showstopper looks beautiful on the table and makes a decadent and delicious dessert. What is it exactly? My version is essentially a chocolate swiss roll filled with a walnut and cream cheese filling, smothered in chocolate icing and topped with chocolate curls. And in the mandatory log format! March is always a busy birthday month, and lately I feel as though I am either busy planning or baking a celebration cake (or both!). My most recent creation was a Peppa Pig cake which I made for my daughter’s third birthday. I have a few other special birthday cakes planned for the coming weeks – look out for a cake filled post with all the photos sometime in the future.

The Freshly Blogged competition is in its 6th week already, wow! This week’s challenge was sponsored by Robertsons Spices and it was a double whammy with a brief that said that we had to create two dishes, both containing cayenne pepper and cinnamon. The other ingredients we had to use were chicken livers, cream and white chocolate, and we could also include any three fresh ingredients and two grocery items.
