Just four sleeps until Christmas (I get the daily count down from my kids, ha ha!) and just time to squeeze in a festive treat to enjoy these holidays. It doesn’t feel like Christmas until I’ve baked something spiced and the homely aromas that come from the kitchen when this gingerbread cake is in the oven are so enticing and comforting.

Halloween is just around the corner and it’s interesting to see how this holiday has taken off in S.A. over the last few years. When I was a child Halloween was a holiday we saw in movies and on t.v. shows but never celebrated ourselves. This year my kids want to dress up and many neighbourhoods are organising (socially distanced) trick or treating. I decided that I would create a “spooktacular” cake to mark the occasion and for a bit of fun!

Holiday pull-apart buns

 

It’s my last blog post for 2019, and I hope you’ll like this Christmas treat that I’ve put together. These cinnamon roll style pull-apart buns are filled with a sweet orange, cranberry and pistachio filling, brushed with a honey glaze and drizzled with cream cheese icing. We are counting down the sleeps until Christmas Day and there’s just time for one more Christmas recipe and my last post for 2018! This festive showstopper looks beautiful on the table and makes a decadent and delicious dessert. What is it exactly? My version is essentially a chocolate swiss roll filled with a walnut and cream cheese filling, smothered in chocolate icing and topped with chocolate curls. And in the mandatory log format! (Apologies in advance to your dentists and personal trainers… #sorrynotsorry.)

It’s time for another cake recipe! Several weeks ago I was asked to bake an apple cake for Miss M’s class to enjoy as a treat as part of their winter festival on their last day of term. Something simple but beautiful, and of course delicious. I turned to my recipe books for some inspiration and decided to go with an Ottolenghi apple cake recipe – as usual, it did not disappoint!

Goodness me, when did December sneak up on us? It has been busy as usual here at Cupcakes and Couscous HQ – rounding off campaigns, finishing up the school year and gearing up for a new school next year, Christmas shopping, not mention all the end of year get-togethers which are lovely but make for a very busy time. A birthday celebration and carrot cake with cream cheese frosting

I started this blog a year ago, with the intention of sharing my favourite recipes and kitchen adventures. I had been mulling over the idea of having a food blog for quite some time before this, but kept putting it off thinking that no-one would read it, or that I would run out of things to write out. I am pleased, and relieved, to say that neither of those things has happened…in fact, little did I anticipate the adventure that lay ahead when I published my first recipe one year ago.
