Chocolate simnel cake

Here’s an Easter bake inspired by the traditional simnel cake. It’s a fruity chocolate cake with a layer of delicious homemade marzipan in the middle and a glossy ganache topping – perfect for some tea time indulging. Yes please!

Festive chocolate and coconut cookies

Let’s fit one more recipe in before the end of the year shall we? I’ve been seeing so many beautiful holiday bakes over on Instagram lately, which has given me even more inspiration to get baking (not that I need much motivation in that department). Cookies and Christmas just go together perfectly!

Chocolate and peanut butter ganache cupcakes

I’ve been baking up a storm this past week. We celebrated my daughter’s birthday over the weekend (which meant party cake and treats as well as cupcakes for school and home) and today Cupcakes and Couscous turns 7! Last year we celebrated with this caramel choc chip ice cream and this year I decided that some decadent chocolate ganache cupcakes were the perfect treat to celebrate this milestone.

Almond and chocolate macarons with Elmarie Berry

How to make almond macarons with chocolate ganache

Chocolate layer cake with dark chocolate ganache

Ottolenghi chocolate cake.

Helloo there. Welcome to March (say whaat?!) and my first blog post for the month. It’s a rather celebratory post and this recipe is inspired by one of my personal foodie icons, Yotam Ottolenghi. This easy chocolate cake recipe is adapted very slightly from one that appears in his book “Sweet” (co-written with Helen Goh) and the reason for this cake post is that this week Cupcakes and Couscous celebrates its fifth anniversary!

Chocolate cheese tart with dark chocolate ganache

Baked chocolate tart

Valentine’s Day is coming up and this lovely little dessert is perfect for the occasion. It’s inspired by an old chocolate tart recipe I made back in college whilst doing my food training, and I have adapted it by adding a decadent dark chocolate ganache layer and using my favourite sweet pastry recipe for the base. (And if making pastry from scratch for someone isn’t a sign of love then I don’t know what is!)

Millionaire’s shortbread with ganache topping

This is a fully loaded treat if ever I saw one. Utter decadence on a plate – I must admit that I only make these occasionally due to their richness and for fear that gobbling too many might induce a sugar coma!

The ultimate chocolate cake and October cake round up

November already and it feels as though we are hurtling towards the end of the year now. Hearing Christmas jingles on the radio, seeing mince pies on the shelves and receiving school newsletters reminding us that there are only five weeks (what?!?) left of this term do nothing to help quell the hysteria!
