I am so excited about today’s recipe, and if you are a chocoholic like me then I am sure you will be too! In our house we like to keep a jar of chocolate spread at the back of the pantry cupboard for those occasional Saturday mornings when we have pancakes for breakfast. While I feel it’s ok to enjoy chocolate spread as an occasional treat I like to start the day on a wholesome note and am conscious that said chocolate spread is not the healthiest thing for the family to be eating first thing in the morning! So when I discovered a healthier version that I could make easily at home I was over the moon.

Cinnamon has got to be one of the most delicious and popular spices out there, and I am rather prone to putting it in everything. Aside from its gorgeous flavour it also has several health benefits. It is full of antioxidants, helps to lower blood pressure and has antiviral and anti inflammatory properties. All the more reason to sprinkle a little more cinnamon into your life.

For most parents it was back to school today and that means having to think about lunch boxes again. I still have a couple of days to go before my littlies go back and I am already dreading them! I was not quite sure what to call this recipe. It is not really like fudge in the traditional, crystalline sense but something in between fudge and chocolate. The reason for this is that I have sweetened it with honey instead of sugar, giving it a silky smooth, melt in your mouth texture – delicious!

There is a fantastic meme doing the rounds on social media at the moment, you might have seen it. Two women are having coffee together and one says “I feel like March flew by so fast” to which her friend replies “It’s May”. *insert comical shocked face here* Judging from many of the conversations I have had in the last week it seems as though a lot of us are feeling that way right now. And look out, because tomorrow it will be June! Other than wondering where the year has gone I have also been looking out for healthier recipes to make at home. We are very fortunate not to have any food allergies in our family but lately I have been inspired to try new ingredients and find healthier alternatives to use at home everyday.
