Happy New Year! I hope that 2022 has gotten off to a good start – maybe you’re still on holiday (yay!). I had a short break over Christmas which was just wonderful. We stayed home and enjoyed lots of eating, swimming, napping and quality time with the fam, just what the doctor ordered. We also hosted Christmas dinner at our place which was very special. Of course it went all too quickly and I had a to-do list waiting for me on Monday morning. Including sharing this short and sweet recipe for these easy and tasty honey and seed bars.

I usually prepare some sort of chicken and veggie tray bake once a week at home. I find it easy with minimal effort required, and the reward of a tasty, nourishing dinner at the end. Today’s chicken and veg recipe is a fantastic week night supper option. The chicken is cooked in a tamari and honey marinade and served with roasted vegetables, simple and scrumptious.

I am so excited about today’s recipe, and if you are a chocoholic like me then I am sure you will be too! In our house we like to keep a jar of chocolate spread at the back of the pantry cupboard for those occasional Saturday mornings when we have pancakes for breakfast. While I feel it’s ok to enjoy chocolate spread as an occasional treat I like to start the day on a wholesome note and am conscious that said chocolate spread is not the healthiest thing for the family to be eating first thing in the morning! So when I discovered a healthier version that I could make easily at home I was over the moon.

Cinnamon has got to be one of the most delicious and popular spices out there, and I am rather prone to putting it in everything. Aside from its gorgeous flavour it also has several health benefits. It is full of antioxidants, helps to lower blood pressure and has antiviral and anti inflammatory properties. All the more reason to sprinkle a little more cinnamon into your life.
