It’s been one of those weeks where I’ve been drowning in admin and feeling like I’m being pulled in ten different directions all the time – it’s been hectic! The busy year end season has definitely started and now more than ever I need recipes that I can get on the table fast. Did I mention that they need to deliver on flavour too? A quick pesto pasta is definitely a great option for those crazy days (plus pasta = comfort food = happiness).

Easy miso and ginger chicken

 

Hi foodie friends. Anyone else feeling slightly panicked at how quickly this month is going?  The kids have just started their final term of school for the year, and it’s always jam packed so I’m bracing myself for that. Between school, recipe testing and book writing, house guests and two family birthdays (and I haven’t even thought about Halloween) there is a LOT going on right now, and I’m leaning on my repertoire of easy week night suppers more than ever to keep the troops fed and happy.

It’s week three of self isolation for my family not to mention one week into South Africa’s lockdown, and it felt wrong to just put out another recipe without acknowledging the strange and unsettling situation that we all find ourselves in right now. Easy chickpea wraps

 

Wow, what interesting and crazy times we are living in! A few days ago I had no idea that this week our little family would be hunkering down at home together (with schools closed and supermarkets cleaned out) and the prospect of another few weeks at home ahead of us. Being in the kitchen is particularly comforting at times of uncertainty like this, and to be able to sit down as a family each evening and enjoy a home cooked meal is a blessing. Over the next few weeks we’ll be doing a lot of that, and I guess that’s just one of the silver linings to a harrowing situation.

Chicken salad recipe with cumin

 

I like to think that over the years I have gotten into some really good eating habits. Like breakfast – I always try to start the day off right with something wholesome and filling. Likewise in the evening I look forward to making a healthy home cooked meal to enjoy after the long day. But when it comes to lunch, well, that is when the wheels fall off. In between the afternoon school run, extra murals and the never ending daily to do list my lunch often takes a back seat. Last year I got into a bad habit of snacking on the go during the day, but of course the snacks never filled me up and I was always tempted to reach for something sugary in the late afternoon when I was feeling low on energy. Not ideal. This is where salad bowls, like the recipe I am sharing today, have been a lifesaver!
