It’s week three of self isolation for my family not to mention one week into South Africa’s lockdown, and it felt wrong to just put out another recipe without acknowledging the strange and unsettling situation that we all find ourselves in right now. Wow, what interesting and crazy times we are living in! A few days ago I had no idea that this week our little family would be hunkering down at home together (with schools closed and supermarkets cleaned out) and the prospect of another few weeks at home ahead of us. Being in the kitchen is particularly comforting at times of uncertainty like this, and to be able to sit down as a family each evening and enjoy a home cooked meal is a blessing. Over the next few weeks we’ll be doing a lot of that, and I guess that’s just one of the silver linings to a harrowing situation.

I like to think that over the years I have gotten into some really good eating habits. Like breakfast – I always try to start the day off right with something wholesome and filling. Likewise in the evening I look forward to making a healthy home cooked meal to enjoy after the long day. But when it comes to lunch, well, that is when the wheels fall off. In between the afternoon school run, extra murals and the never ending daily to do list my lunch often takes a back seat. Last year I got into a bad habit of snacking on the go during the day, but of course the snacks never filled me up and I was always tempted to reach for something sugary in the late afternoon when I was feeling low on energy. Not ideal. This is where salad bowls, like the recipe I am sharing today, have been a lifesaver!

I have got something easy and fun for you today! We have a little tradition in our house called “Pizza Fridays”. It’s a treat to look forward to at the end of the school and work week and, depending on what is on the schedule that day, I tend to whip up a quick pizza for the kids to have for supper. Occasionally I will make a proper yeast dough and tomato sauce from scratch for the whole family to enjoy, but it is usually something I can put together pronto like this tortilla pizza or today’s recipe which uses scone dough as its base.
