Spinach and ricotta stuffed pasta

A tray of stuffed pasta in tomato sauce

There are so many wonderful flavours in today’s recipe! In this cosy, vegetarian dish pasta tubes are filled with a creamy ricotta and spinach filling, with added mushrooms, parmesan and a hint of zesty lemon to lift it all. The pasta is then immersed in a lightly spiced tomato sauce and baked to perfection.. and let’s not forget the golden, cheesy mozzarella topping.

One pot creamy mushroom orzo with spinach and chorizo

Bowls of orzo pasta

If a creamy, comforting and quick meal is what you’re after then you’re in the right place. Not only does this meal deliver on flavour, but it’s a one pot wonder so you’ll have less washing up to do afterwards, love it! The hero of this recipe is the orzo, which cooks together in the pot with all of the other ingredients. My family might argue that the chorizo is in fact the real hero here, and who can blame them?

Cheesy bacon tagliatelle

I love a bowl of creamy pasta and the unseasonably cooler weather we’ve been having this week has me craving meals like this, they’re just so comforting. This is another great recipe to keep handy for weeknight suppers as it’s quick to prepare and the whole family will love it.

Rocket and goats cheese pesto pasta

It’s been one of those weeks where I’ve been drowning in admin and feeling like I’m being pulled in ten different directions all the time – it’s been hectic! The busy year end season has definitely started and now more than ever I need recipes that I can get on the table fast. Did I mention that they need to deliver on flavour too? A quick pesto pasta is definitely a great option for those crazy days (plus pasta = comfort food = happiness).

Creamy tomato penne with pesto

 Quick pasta dishes
We love a good pasta dish in our house, and this is one of my go-to recipes for a quick and delicious week night meal. The sauce is ready in under thirty minutes and can even be made ahead of time and reheated. And I have to say it again – it is so tasty!

Bacon and broccoli macaroni cheese

This post comes a week later than planned, and regular readers might have noticed that I was missing in action last week. The week started with a fun trip to Bloemfontein and a food demonstration (look out for another blog post about this next week) but quickly went downhill after that as I returned home to two sick children as well as having a nasty bout of flu myself! So unfortunately my regular schedule went out of the window, but I am happy to report that aside from a few lingering symptoms things are on the up for team Ulyate!

Spaghetti bolognese

Spaghetti bolognese with mushrooms and parmesan

There are probably as many variations of this dish as there are families who enjoy it. Or perhaps even more! I love making this dish but dear husband is usually the Spag Bol King in our house and even he and I have our own different ways of preparing it. Bottom line though – it does not matter who the chef is, spaghetti bolognese is a firm favourite on the menu, and one thing is always the same – we both love to pile in the mushrooms!
