This week’s recipe doubles up as a quick midweek supper or a delicious lunch! I’ve used a zesty homemade basil pesto in this pasta dish along with sautéed chicken, cherry tomatoes and not forgetting the all important parmesan. This speedy meal is easy, filling and full of flavour.

We love a good pasta dish in our house, and this is one of my go-to recipes for a quick and delicious week night meal. The sauce is ready in under thirty minutes and can even be made ahead of time and reheated. And I have to say it again – it is so tasty!

This post comes a week later than planned, and regular readers might have noticed that I was missing in action last week. The week started with a fun trip to Bloemfontein and a food demonstration (look out for another blog post about this next week) but quickly went downhill after that as I returned home to two sick children as well as having a nasty bout of flu myself! So unfortunately my regular schedule went out of the window, but I am happy to report that aside from a few lingering symptoms things are on the up for team Ulyate!

There are probably as many variations of this dish as there are families who enjoy it. Or perhaps even more! I love making this dish but dear husband is usually the Spag Bol King in our house and even he and I have our own different ways of preparing it. Do you know how a song can evoke a particular memory, or how a specific scent can transport you straight back to a moment in your past? Well, this dish will always take me back to a certain time. He was a few weeks old and we were so in love with our sweet newborn but completely exhausted from lack of sleep and the general upheaval that comes with the territory. One afternoon, an angel in the form of one the moms from my daughter’s play school arrived at our door with a bag of rice, chocolate biscuits and a tupperware full of tasty beef stroganoff. It was a very welcome delivery at that particular time and this dish will always remind me of that day!

Last Thursday I was invited to attend the Knorr Flavourful Goodness Experience at the SA Chef’s Training Academy in Observatory. Food bloggers, nutritionists and members of the media were invited to “rediscover the joy of simple family cooking” along with familiar face Chef Wendy and the Unilever team.

The Freshly Blogged competition is in its 6th week already, wow! This week’s challenge was sponsored by Robertsons Spices and it was a double whammy with a brief that said that we had to create two dishes, both containing cayenne pepper and cinnamon. The other ingredients we had to use were chicken livers, cream and white chocolate, and we could also include any three fresh ingredients and two grocery items.
