Movie night pizzas

 

Ah, I see the weekend on the horizon! We love Fridays around here. The end of the work week, no homework to worry about and a chance to kick back and engage relaxation mode. Friday nights are often movie night around here, and this pizza is regularly requested by the kids. As tempting as it is to rather pick up the phone and order in (and don’t get me wrong, we do that too!) this pizza is worth making from scratch and actually doesn’t require too much effort in terms of hands on cooking. It’s super delicious – perfect movie night food!

Thin crust spelt flour pizza

Spelt flour pizza base.
It’s a new month and time to get back to normal after all of the school and public holidays which have had many of us wandering around much of the time scratching our heads and trying to work out what day it is! (Or maybe that was just me?) Last week I took a little break and the family headed to beautiful Knysna for a couple of wonderfully chilled days. Well, as chilled as you can be with two small children running about. We had a brilliant time and I so enjoyed being out of the normal routine, free from the usual daily chores and away from my laptop screen! Just what the doctor ordered.

Cheesy mushroom and pork enchiladas

This recipe went down a treat when I made it at home. Even my Little Miss (who finds the teensiest smidge of black pepper in any meal unbearably exotic) enjoyed it! These rich enchiladas are flavoured with Mexican inspired spices, topped with a double layer of sauce and baked to cheesy perfection in the oven. Get in my belly! As part of the #JoinTheBlendTrend series this recipe is also about blendability and that fabulous ingredient: mushrooms!

Homemade tomato sauce

In the last few months I have been hearing more and more about sugar, particularly the negative effects it has on body and mind. I have become more conscious of my sugar intake, especially the hidden sugars that lurk in most convenience foods, and thinking of ways to reduce it. Wouldn’t it be great, I thought, to develop some sugar-free versions of some of my family’s favourite condiments, starting with that oh-so-delicious but oh-so-sugary tomato sauce. I started working on a recipe, but then life just got crazy busy and my poor little recipe slowly slipped down the to do list and was forgotten for a few weeks.
