The Easter weekend is almost upon us and today’s recipe is packed with all the chocolate and all of the treats. I’ve included dark chocolate as well as Chuckles and speckled eggs (two of my weaknesses) for good measure in these rich and gooey Easter brownies. This is the type of recipe I reserve just for special occasions, and if you’re looking for a weekend splurge you have come to the right place!

If the walls of boxes filled with marshmallow eggs and armies of foil wrapped Easter bunnies piled high in the shops weren’t enough of a reminder, Easter is just around the corner! I usually prepare some sort of chicken and veggie tray bake once a week at home. I find it easy with minimal effort required, and the reward of a tasty, nourishing dinner at the end. Today’s chicken and veg recipe is a fantastic week night supper option. The chicken is cooked in a tamari and honey marinade and served with roasted vegetables, simple and scrumptious.

There are always lots of delicious flavours to choose from and one Friday afternoon in the car on the way home it led to us having a discussion of which varieties the children would make if they had their own ice cream shop. After some ideas were thrown around my son then suggested that every time one of us has a birthday we should should make our own bespoke celebratory batch of ice cream with a different flavour (chosen by the birthday girl/boy) each time. I rather liked that idea but it was put on the back burner… until recently.
