When I was younger I would spend hours paging through my Mom’s collection of recipe books. She still has a few hardcover notebooks filled with handwritten recipes from family and friends, and magazine clippings that have been pasted in. One of these is Granny’s delicious homemade lemon concentrate recipe.
It’s a complete coincidence that this recipe was next up on my blogging schedule given last Saturday’s big rugby game! I was recently given a copy of James Martin’s “Great British Adventure” cookbook, and when I spotted the recipe for Welsh cakes I simply had to try them right away.

Today’s recipe is an updated version of a dish I put together six years ago and is a delight for all the veggie lovers out there – crispy phyllo pastry parcels filled with roasted veggies and topped with sesame seeds! Serve them as a starter, a side dish or even as the main event!

Earlier this week I posted some photos on social media of a batch of biscuits I was making in the old “roll and fork” style (I was trying to create something that reminded me of the biscuits we enjoyed as kids). The image got a bigger response than anything else I’ve posted recently (you guys sure love your biscuits!) and it inspired me to put together another recipe round up – and this time it’s allll about cookies.
I first learnt to bake before I learnt to cook, and baking cookies at home takes me straight to my happy place. I hope these recipes do the same for you!

If you’re looking for your next cookie fix then take it from me – these peanut butter cookies should definitely be the next thing you bake. These giant, chewy cookies are loaded with peanut butter and dark chocolate and it’s virtually impossible to eat just one. Totally yum, you have been warned!

An oldie but a goodie, aubergine parmigiana is a scrumptious side dish that I absolutely love. This is classic comfort food that’s perfect for serving to a crowd alongside a main meal, (although I’ll happily enjoy it for lunch with a fresh side salad too).

Last month I was invited by Sarah Baade over at Slice of Honey to collaborate on a sheet pan dinner project. Sheet pan dinners are right up my alley – as a busy mom with lots on my plate (pardon the pun) I love being able to pop a complete meal on a tray and get on with a few things at home while it bakes in the oven. Such a quick, delicious and wholesome dinner solution! You can also change up your sheet pan dinners (as you’ll see below) by mixing up your choice of protein, using whichever veggies you happen to have in the fridge and adding different spices and/or sauces each time.
