As promised last week I have a divine dessert for you today and it is inspired by one of our favourite puddings here in S.A. Milk tart is a South African classic – a pastry shell filled with custard, baked and then topped with cinnamon. The only dessert my kids ever ask for these days though is ice cream, so I decided to play around and combine the two. The result – an easy no-churn ice cream with all the flavour of a milk tart, winning!

I am so excited about today’s recipe, and if you are a chocoholic like me then I am sure you will be too! In our house we like to keep a jar of chocolate spread at the back of the pantry cupboard for those occasional Saturday mornings when we have pancakes for breakfast. While I feel it’s ok to enjoy chocolate spread as an occasional treat I like to start the day on a wholesome note and am conscious that said chocolate spread is not the healthiest thing for the family to be eating first thing in the morning! So when I discovered a healthier version that I could make easily at home I was over the moon.

A few weeks ago I was challenged by Nicolas over at Blogtastic Food to create a fabulous vegan dessert as part of a blogger recipe collaboration. The idea was inspired by this recipe for vegan lemon meringue pie which Nicolas put together recently, and he had the idea to challenge other food bloggers to get creative (vegan style!) and do the same. And that is how this vegan chocolate caramel tart came about.

It’s icy out there thanks to the deluge of snow the Cape has received over the last few days (so prettyyyyy!) but I am here to help with some gorgeous baked puddings served up in pleasing individual pie format, yay! Of the many cold weather comfort foods to look forward to at this time of the year home made pies are definitely in my Top 5. Plus you get major domestic god(dess) points for making them from scratch. Time for something that’s a little bit naughty but nice… the result of an afternoon spent experimenting in my kitchen. I was originally going for a double layered treat, but then I thought why stop at two? And that’s how these triple decker squares of chocolatey coconut yumminess (that also happen to be gluten and refined sugar free) came into existence. Now these no bake chocolate coconut squares are one of my new favourite things!
