Chocolate chip and coconut cookie bark

 

Have you heard of cookie bark before? I came across this idea on Pinterest and was immediately intrigued – with a name like cookie bark who wouldn’t be? It sounded so good! To be honest I’m not sure what the exact definition of cookie bark is as there seem to be endless variations out there… chocolate poured on top of a cookie slab, cookies crumbled over a layer of chocolate, cookies mixed into chocolate, cookie dough sandwiched between layers of chocolate, thin bark, chunky bark… it seems anything goes.

Spring crostini 4 ways

 

After being battered by storms and making it through a bitterly cold winter it seems to be safe to come out again and enjoy the outdoors. We tend to go into hibernation over the winter, but now that the sunshine is back we’re looking forward to more get-togethers with friends and entertaining at home.

Ginger and dark chocolate snack bars

 

I had to play around with this recipe a few times to get it just right, and I’m so glad I persevered because these ginger and dark chocolate bars are absolutely delicious! They’re chewy and oaty with a tasty hint of ginger. The dark chocolate layer at the bottom finishes them off perfectly. I would definitely classify these as a treat snack, and they are rather lovely as an afternoon pick-me-up.

Roasted red pepper and goats cheese pizza

 

Hi foodies! I’m back in the kitchen after a fabulous few weeks in the U.K. and Ireland. The family and I packed so much into our time there including lots of sightseeing (i.e. walking, walking and more walking) and time spent catching up with family. In terms of eating out the rand-pound exchange rate is eye-watering at the moment, so home cooked meals were the order of the day, with only a handful of restaurant meals in-between. That was just fine with me. I love a good old nosy around the supermarket shelves over there as there are always new and interesting products to discover and delicacies such as McVities Jaffa Cakes and Tony’s Chocolonelys to stock up on (if you know, you know).

One pot beef chilli

 

This basic beef chilli recipe is so satisfying and will warm you up from the inside out on cold winter evenings. We love a good old spag bol at home, and beef chilli is a bit like spag bol’s spicy cousin. With beans. Pop the pot onto the table along with your side dishes, and let everyone help themselves and build their own meal. This is one recipe where I know I’m guaranteed to see clean plates at the end of dinner time!

Honey rusks

 

Today’s post is all about one of our local breakfast and snacking staples. South Africans need no introduction to this twice-baked biscuit and I’m sure most would agree that happiness is the sight of a fully stocked jar of home made rusks on the kitchen counter, haha! These rusks are a little different from a traditional recipe as I wanted to create a version made with honey instead of sugar, and we’ve really been enjoying them at home.

Quinoa bowl with tahini dressing

 

This bright and wholesome bowl is a lunch I’ve been enjoying on repeat lately. It’s also great for picnics. Ever popular quinoa is very versatile, and in this bowl I’ve topped it with spiced chickpeas, crunchy carrots, tomatoes, crumbly feta and a nutty tahini dressing. It’s an incredibly satisfying meal and a nutritious way to elevate your salad game.
