A few weeks ago I was challenged by Nicolas over at Blogtastic Food to create a fabulous vegan dessert as part of a blogger recipe collaboration. The idea was inspired by this recipe for vegan lemon meringue pie which Nicolas put together recently, and he had the idea to challenge other food bloggers to get creative (vegan style!) and do the same. And that is how this vegan chocolate caramel tart came about.

Time for something that’s a little bit naughty but nice… the result of an afternoon spent experimenting in my kitchen. I was originally going for a double layered treat, but then I thought why stop at two? And that’s how these triple decker squares of chocolatey coconut yumminess (that also happen to be gluten and refined sugar free) came into existence. Now these no bake chocolate coconut squares are one of my new favourite things!

I love a good, nourishing snack recipe, and while I often turn to date balls as my go-to home made snack (side note – I cannot believe how tiny Miss M. looks in the photographs in that post!) I love trying out new combinations and recipes using my favourite healthy ingredients. I tend to keep my cupboard stocked with dates and a collection of various nuts and seeds, along with my essentials – oats and honey, so I decided to mix them all together in this delicious muesli bar recipe.

Ginger and orange biscuit truffles

Easter biscuit truffles

 

I’ve got a real treat for you today, and this recipe for biscuit truffles actually makes me feel rather nostalgic for two reasons. Firstly, as promised, it is the first in a short series of Easter recipes that I have planned for the next few weeks. Easter always conjures up childhood memories of school holiday visits to family living further up the coast, torrential rain that lasted for days (how I miss that rain now!) and of course the much anticipated Easter morning egg hunt in our garden after church. Fast forward a decade or three and I am now the one searching around the garden for spots to hide the eggs, ha ha! I can’t decide which is more fun actually – searching for chocolate treats or watching the faces of my children as they spot bunny footprints on the pathway outside or discover their Easter treasures in their hiding spots!
