Back to School: 8 Days of Lunchboxes

Top shots of bowls of snacks

Let me start this post by saying that as parents I don’t think we need to be packing gourmet Pinterest-worthy lunchboxes every day, we are pressured enough as it is! However, I do think that variation and balance are important, and so the purpose of this post is simply to put lots of ideas out there so you can pick and choose the components that you think your children will enjoy and that are do-able in your home.

Indulgent chocolate brownie trifle (for people who love dessert but don’t like trifle!)

Individual chocolate trifle recipe with chocolate mousse, chocolate brownies, ice cream, mini meringues and berries for people who don't like traditional trifle

It’s my last post for the year and of course it had to be a festive recipe. I’ve been busy in the kitchen baking edible gifts and trying to do as much advance prep as I can for Christmas dinner and if you’re there too I hope it’s going smoothly! We’re ending the year on a sweet note with a recipe that’s inspired by a classic. Let’s face it, trifle is wildly popular at this time of the year but (confession time) I’m really not a fan. I think it’s the soggy combination of boozy finger biscuits, custard and jelly and the piles of cream on top that give me the heebie-jeebies, and it’s just not a dessert that I’ve ever taken to. Nutella cheesecake mousse

With so many of my favourite treats in one title this dessert just has to be amazing, right? It was also World Nutella Day earlier this week (so worthy of a food holiday) and with Valentine’s Day just around the corner this seemed like the perfect recipe to post this week.

Chocolate coated raw cookies with raspberry and coconut filling

I love a healthy treat and this recipe requires a little bit of effort but is so worth it if you’re looking for a sweet fix with a bit of added goodness. I’m talking about these dark chocolate coated raw oat cookie sandwiches filled with coconut and raspberry centres. They are heavenly!

Chocolate and cranberry cereal bars

Today’s no bake chocolate treat is one that kiddies and grown ups alike will love! And I’ve realised that one can never have enough snack ideas in one’s recipe collection when little (and big) tummies need some sustenance in between meals.

Date caramel and chocolate pots

Date caramel

Happy New Year and hello 2018! I am happy to be back after a lovely break, it was great to have a change from the regular routine for a while. Now though, it’s time to get back into the swing of things and it really feels as though we have hit the ground running this week hasn’t it? (My inbox alone can attest to that.) I have got a good feeling about this year…2018 – I am ready for you!
