It’s almost December and after trying my best over the last two months to ignore the Christmas jingles on the radio and festive paraphernalia lurking at every turn in the supermarket I have decided to embrace the season. Yes folks, I am officially “feeling Christmassy”. Over the next few weeks I will be sharing some divine Christmas treats, so let’s kick things off today with a bit of festive baking shall we?

We’re keeping things simple this week with a beautiful but uncomplicated French dessert. Clafoutis, (pronounced kla-foo-tea) is traditionally made with cherries, but it works with lots of types of fruit. And don’t let the fancy name put you off – clafoutis is actually very simple to make. I decided to go for an apple version this time around, with plenty of cinnamon thrown in for good measure!

Overnight oats have been around for a while and have recently become one of my breakfast staples! We almost always have oats for breakfast at home – either included in our home made granola or cooked up the usual way, but now we are taking it to the next level with this delicious gluten, dairy and refined sugar free overnight oats recipe with a tropical twist.

Time for another healthy snack recipe. Ha ha, I wish! But you have to treat yourself every now and then, yes? I realised recently that I have never posted a doughnut recipe until now, so let me make up for that with these baked mini chocolate mousse doughnuts.

Cinnamon has got to be one of the most delicious and popular spices out there, and I am rather prone to putting it in everything. Aside from its gorgeous flavour it also has several health benefits. It is full of antioxidants, helps to lower blood pressure and has antiviral and anti inflammatory properties. All the more reason to sprinkle a little more cinnamon into your life.
I am betting you have a jar of this wonderful stuff in your pantry, so why not dig it out and try out some of these treats using this versatile spice. Don’t forget to let me know in the comments which cinnamon recipe is your favourite!

It has been busy as usual here at Cupcakes and Couscous HQ – rounding off campaigns, finishing up the school year and gearing up for a new school next year, Christmas shopping, not mention all the end of year get-togethers which are lovely but make for a very busy time. It is go go go and sometimes you just need a few carbs to keep you going! Today I bring you carbs, and then some.

While there is no denying that the arrival of summer is highly anticipated at the end of each year, I have to admit that I rather look forward to the autumn season. A welcome respite from the heat, beautiful red and brown leaves dotting the trees and an excuse to start enjoying some favourite comfort foods are just a few of the things that come to mind.

March is always a busy birthday month, and lately I feel as though I am either busy planning or baking a celebration cake (or both!). My most recent creation was a Peppa Pig cake which I made for my daughter’s third birthday. I have a few other special birthday cakes planned for the coming weeks – look out for a cake filled post with all the photos sometime in the future.
