Goodness me, when did December sneak up on us? It has been busy as usual here at Cupcakes and Couscous HQ – rounding off campaigns, finishing up the school year and gearing up for a new school next year, Christmas shopping, not mention all the end of year get-togethers which are lovely but make for a very busy time. It is go go go and sometimes you just need a few carbs to keep you going! Today I bring you carbs, and then some.
While there is no denying that the arrival of summer is highly anticipated at the end of each year, I have to admit that I rather look forward to the autumn season. A welcome respite from the heat, beautiful red and brown leaves dotting the trees and an excuse to start enjoying some favourite comfort foods are just a few of the things that come to mind.
March is always a busy birthday month, and lately I feel as though I am either busy planning or baking a celebration cake (or both!). My most recent creation was a Peppa Pig cake which I made for my daughter’s third birthday. I have a few other special birthday cakes planned for the coming weeks – look out for a cake filled post with all the photos sometime in the future.
Things are seriously slowing down here at Cupcakes and Couscous HQ as we prepare to welcome our newest little cupcake to the family! And I think we are as ready as we will ever be – after a frantic last minute dash the nursery has been prepared, the baby clothes have been washed and sorted and my hospital bag is ready and waiting. Those who know me well will tell you that baking is one of my favourite things to do, and so while we count down the last few days until d-day I have managed fit in some baking time… and another recipe for you, hooray!
Let’s start this post with some fun facts about me: Fact #1: 99.99% of my days start in exactly the same way – with a cup of rooibos tea. They have done for about the last seven or eight years. It is fair to say that I am a fan! Fact #2: I used to make iced tea (including a rooibos variant) for a living before my London / travelling years. I was obviously thrilled then to receive an invitation from Freshpak to a creative afternoon with chef, Kirsty Rowett.
