Bakers, I’ve got a goodie for you this week. These melt-in-the-mouth chocolate cookies are a sublime tea time treat and lots of fun to make too. I based the recipe on these custard and vanilla bean sandwich cookies. These were so popular when I published them last year that I decided to tweak the recipe slightly and create a chocolate version.

We’re celebrating two special family birthdays in October, my son’s and my dad’s, and in honour of that today I’m sharing my go-to vanilla party cake recipe. I’ve lost count of the number of times I’ve made this cake, it’s THAT good. My favourite thing about it is that it keeps so well. I can make the cake a day ahead and quickly ice it on party day which saves so much time and stress on the day. Of course the vanilla flavour just wonderful too, it’s always a crowd pleaser.

Not only is it the beverage of choice for many of us (me included) but it can be used in baking and cooking to add a delicate, sweet and earthy taste. These apple buns are such a treat and my family has requested them many times since I first tested the recipe a few weeks ago. I was so happy with the way they came out! The buns are soft and light, and if you love all things apple like us then you’ll also love the flavour. And to make them extra special they’re topped with a caramel flavoured cream cheese icing, need I say more?

When I was growing up hot cross buns weren’t readily available all year round (as they are now!) and I remember my excitement at seeing them appear on bakery shelves and knowing that Easter holidays were approaching. They are another one of those treats that evoke childhood memories of family gatherings, Easter craft projects and feeling impatient during the Easter Sunday morning church service knowing that there would a chocolate egg hunt afterwards! And of course the memory of enjoying fresh hot cross buns over the Easter weekend.
