March is always a busy birthday month, and lately I feel as though I am either busy planning or baking a celebration cake (or both!). My most recent creation was a Peppa Pig cake which I made for my daughter’s third birthday. Apple and raisin oaty crumble with vanilla custard

This is a little something I whipped up over the weekend and an absolute classic as I am sure you will agree! There is something very comforting and homely about preparing and eating this particular dessert and I love the heavenly combination of spiced apple, crunchy oat crumble and creamy vanilla custard.

Granny D’s lemon fridge tart

I recently received an email from a South African ex-pat living in the U.S.A. asking whether I had a fridge tart recipe to share. Two things immediately came to mind: firstly my super easy lemon fridge cheesecake recipe which I promptly sent to her; secondly one of my mom’s recipe books containing a handwritten lemon fridge tart recipe, passed on from my paternal grandmother. I seem to recall we had enjoyed the fridge cake at a Sunday lunch and immediately requested the recipe. I have not paged through that book for years but remember the recipe distinctly – it is written in green pen and was probably pasted into the book at least 20 years ago. I was intrigued to give it a try and see whether it is still a winner.

Lemon curd swirl ice cream

So before you think I have lost the plot let me confirm a few things. Yes, I know it is winter in the Southern Hemisphere. Yes, it is true – I am currently sitting at my desk, typing this recipe while the rain lashes my window and my fingertips begin to feel more and more numb. (In fairness it was 25 degrees two days ago, Cape Town – you tease!) But yes – I have still chosen to post this recipe that I created recently. On a cold day. In this here winter season. And that is simply because ice cream is fantastically fabulous and should, I think, be enjoyed and appreciated all year round! Everyone happy? Good!

Double chocolate almond meringues

I whipped these up a while ago when I found myself sitting with a few extra egg whites leftover from a batch of fresh pasta I had made. The perfect excuse to make meringues! Not just any meringues, no no… but an extra special version with dark chocolate and crunchy almonds. They were so delicious that I have made them several times since.
