Lemon meringue pie

Hi foodies! I’ve just arrived back from a fabulous trip to the U.K. – what a treat! I spent most of my time in London getting reacquainted with the city that was my home for a few years after I got married, and I was reminded of how much I loved living there! I’ll share a few photos in my next blog post.

Onto the recipe, and if I had to choose my top three desserts this would absolutely be one of them!! I have always loved lemon meringue pie. It’s such a crowd pleaser too – whether we’re entertaining or I’ve made one as a treat for the family it’s always a hit. This is a bog standard recipe and the one I’ve been making for years and years. I never thought to post it here, but when I shared some pics of one I’d made on Instagram recently I had a few people asking me to share my recipe… here you go everyone! 😉

Lemon and ginger cheesecake.

So you may have noticed that things are looking a little different around here. That is because Cupcakes and Couscous has a brand new home on the web! How do you like our new space? We are still busy smoothing out a few details including streamlining the recipe index which has grown substantially over the years! All of your favourite recipes are still here but if you can’t find what you are looking for do let me know so I can point you in the right direction.

Lemon tart

Classic tarte au citron
This is a classic dessert and comes from one of my favourite cookbooks, “The Food of France”. I have made this lemon tart many times and it always goes down well with a crowd! I love citrus puddings and bakes, and tarte au citron is one of my absolute favourites. The sweet pastry used in this recipe is also lovely to work with and can be used in all sorts of sweet tarts.

Creamy chicken with lemon and rosemary

Chicken thighs in a creamy sauce with lemon and rosemary.
After what felt like a particularly cold winter we are in full spring mode, hooray! The worst should be behind us now and I have a suitably zesty and lemony fresh recipe to get you into a sunshiny mood. If you are lucky you may even have a lemon tree in your garden with fresh lemons that you can use to make this amazingly creamy sauce. We have one which was given to us by some good friends several years ago, soon after we moved into our then new home. Fortunately it has not succumbed to drought, pests or a lack of conversation but it has not exactly flourished either. In fact, nearly six years after we planted it, I think it is roughly the same height as it was when we got it, give or take a few extra leaves on either side. So until our stunted tree can get its act together it is store-bought lemons for us!

Sticky lemon and poppy seed muffins

Over the last year I have worked on some very interesting and fun campaigns, and I feel lucky to be able to do this from home. However, this work-from-home scenario is not without its challenges, chiefly in the form of two very busy (but adorable of course) and engaging little humans.

The lightest lemon squares (with video)

 Light lemon cake squares.
The other day my daughter came home from school and (after proudly showing me the red autumn leaves she had found in the playground that day as well as an energetic, full length rendition of “The Farmer in the Dell” – oh to be four again!) told me that her class had celebrated a birthday that day and that the birthday boy had brought a lemon cake to school for everyone to share. It made me think of this recipe which is one of those that I have had for years, scribbled on a piece of paper and unceremoniously shoved inside a notebook. It is a fantastic recipe and worthy of a more permanent home here on the web and not just on a scrap of paper!

Lemon curd swirl ice cream

So before you think I have lost the plot let me confirm a few things. Yes, I know it is winter in the Southern Hemisphere. Yes, it is true – I am currently sitting at my desk, typing this recipe while the rain lashes my window and my fingertips begin to feel more and more numb. (In fairness it was 25 degrees two days ago, Cape Town – you tease!) But yes – I have still chosen to post this recipe that I created recently. On a cold day. In this here winter season. And that is simply because ice cream is fantastically fabulous and should, I think, be enjoyed and appreciated all year round! Everyone happy? Good!

Lemon curd

Before we delve into this week’s recipe I wanted to share my most recent dining out experience with you. Black Sheep Restaurant in Kloof Street, Cape Town has been around for a little while now, and it is not surprising to see why it is so popular. There is a seasonal blackboard menu which changes regularly, but no shortage of tasty dishes to choose from. The layout of the restaurant is interesting, with a downstairs bar area and tables set out on multiple levels. Snappy service in a relaxed atmosphere made for a delightful meal.

I enjoyed a fragrant and tender lamb curry served with rice and flatbreads, and I found the level of heat was just right for me, (extra chilli is provided for those who prefer their curry more fiery). Dessert was a light ginger beer sorbet served with gorgeous lime curd and a gingersnap.Which got me all inspired to make this next recipe…
