Home made nut butter is one of the easiest things to make, you can play around with add ins and you have full control over what goes into it. Peanuts, almonds and hazelnuts are my nut butter go-to’s, but lately I’ve been playing around with macadamia nut butter and created a recipe that is next level delicious, I’m obsessed!

Double chocolate Easter buns

 

Easter is around the corner and I decided to give one of my favourite bread dough recipes a chocolate twist for the occasion. This brioche dough is enriched with milk, egg and butter making it extra delicious and soft. It’s really easy to work with and the buns are utterly divine to eat!

Christmas biscuit truffles

 

Ever since I posted my no-bake Halloween biscuit truffles a few weeks ago I’ve been dying to try a Christmas version. I finally got around to it and they came out so well. I replaced some of the chocolate biscuits with ginger biscuits, added some orange zest for more of a festive flavour and dipped the truffles in dark chocolate which I decorated with mini fondant holly leaves, sprinkles and glitter.

Halloween “boo-scuit” truffles

 

BOO! It’s Halloween tomorrow, and kiddies all around are looking forward to the big day! My kids are putting the finishing touches on their costumes and planning their walking route around the neighbourhood, it really is lovely to see them so excited. Small batch chocolate liqueur brownies

 

We’ve had these grown-up dessert brownies on repeat lately. The batter itself only takes a few minutes to mix together, and the brownies are topped with a layer of smooth dark chocolate ganache. I added a splash of chocolate liqueur to the brownies and the ganache for extra richness – so good!

Bar-one cookies

 

I’m riffing off one of my favourite childhood cookie recipes this week and lemme tell ya, these cookies disappeared so quickly – we couldn’t stop snacking on them! I’ve used small bar-one chunks as the add-in here and they go deliciously chewy and gooey in the oven.

Chocolate birthday cupcakes

 

The cake theme continues! Not only did I celebrate 10 years of Cupcakes and Couscous last month, but my daughter also celebrated her 11th birthday, yay! I am also thrilled to let you know that we have just completed the photography for the book (whoop whoop!) and the images are looking fantastic. I am so blessed to be working with an incredible team who have helped me to bring the recipes to life in such a beautiful way. All I can say is that I’m more excited than ever to share this book with you later in the year. So there has definitely been lots to celebrate lately.
