While Cape Town still decides whether it is actually spring or not (and I sit and type at my desk watching the clouds gather outside) I thought I’d sneak in a cooler weather dish. Tomato bredie is a South African family pleaser and has the marvellous combination of lamb, fragrant spices and tomatoes that we know and love. Once all of the ingredients are in the pot you can leave it to work its magic until its time to serve up. Scrumptious!
We’re all familiar with the adage “you eat with your eyes first” and I couldn’t agree more. I also think that having lots of colour on your plate is always a good idea, but I deviated from this idea in today’s recipe which I developed for Cheers Magazine earlier this year.

I’m always up for Mexican food, especially when nachos are on the menu! This deliciously spicy recipe is a crowd pleaser and screams weekend food (although frankly the days are all merging into one at the moment, what day is it again?). Packed with fresh ingredients and plenty of flavour these crunchy tray bake nachos topped with spicy beef and melted cheese are super tasty. Don’t forget the guacamole and sour cream and you’re all set for a fantastic dinner.

Wow, what interesting and crazy times we are living in! A few days ago I had no idea that this week our little family would be hunkering down at home together (with schools closed and supermarkets cleaned out) and the prospect of another few weeks at home ahead of us. Being in the kitchen is particularly comforting at times of uncertainty like this, and to be able to sit down as a family each evening and enjoy a home cooked meal is a blessing. Over the next few weeks we’ll be doing a lot of that, and I guess that’s just one of the silver linings to a harrowing situation.
This week’s recipe doubles up as a quick midweek supper or a delicious lunch! I’ve used a zesty homemade basil pesto in this pasta dish along with sautéed chicken, cherry tomatoes and not forgetting the all important parmesan. This speedy meal is easy, filling and full of flavour.
