I’m always up for Mexican food, especially when nachos are on the menu! This deliciously spicy recipe is a crowd pleaser and screams weekend food (although frankly the days are all merging into one at the moment, what day is it again?). Packed with fresh ingredients and plenty of flavour these crunchy tray bake nachos topped with spicy beef and melted cheese are super tasty. Don’t forget the guacamole and sour cream and you’re all set for a fantastic dinner.

Spicy chicken burritos

Home made chicken burritos.


A few years ago I watched a movie called “Chef”. It was about a, you guessed it, chef who quits his restaurant job and embarks on a journey across the U.S. in a food truck that he has fixed up, selling his food at various stops along the way. Since then it seems as though the food truck trend is continuing to explode, and it got me thinking about what it is that we find so appealing about them. Is it being able to watch your meal being created in front of you – or simply having a friendly chat with the person preparing it? With so many unique food offerings there is bound to be something for everyone, and what a pleasure to be able to try something new and support a small business at the same time. Bring it on I say!

Spicy mushroom nachos


We have reached the end of the #JoinTheBlendTrend series and I thought I would finish up with a dish that reminds me of fun times with friends, feasting and general merriment. I actually remember the last time I ate nachos at a Mexican restaurant with friends – it was a rainy Cape Town evening a very, very long time ago (note to self: arrange a Mexican dinner soon!). Luckily nachos are pretty easy to whip up and enjoy at home and I am sure you will enjoy these ones!
