Double chocolate peanut butter fridge cake – and a surprise!

This surprise has been a long time coming – a thought that became an idea that I have been stewing over for many, many months that then turned into a project that became a labour of love. This month the blog turned 3 and as a big, huge thank you to everyone who has followed my kitchen adventures I decided to put together a little gift for each reader. Yes, you get one! And you get one! Everybody gets one!

Sugar free banana cake (with video)

It is March and in my house that equals birthdays and lots of baking! I made this cake earlier in the month for my daughter’s school birthday and wanted to avoid added sugar but still make something delicious that the children would love. This cake has a soft, light texture and a delicate banana flavour. Rather than cover the cake with icing I drizzled it with delicious melted carob. This is a great alternative to chocolate!

A fairy party (and a fairy cake!)

If there was ever a good time to haul out some banal clichés then this must be it. “Time flies.” “They grow up so fast.” How often we use these timeworn phrases, and yet how true they are. As I write this, almost exactly 4 years ago to the hour my precious daughter arrived into the world. I remember it like it was yesterday, (which is impressive as I often struggle to remember what I was doing last week!). My bright, funny, sweet girl who knows exactly what she likes and wants… which is handy as I knew for months that she had her heart set on a fairy birthday party this year. Oh yes, one of the many things I love about her is that she knows her own mind, and once it is made up she usually sticks to her guns. Luckily this also meant that I had quite a while to mull over cake ideas before settling on this one.

Caramel apple and blueberry tart

I know that I am not the only Capetonian who did a little dance of joy when the rain started on Sunday night. It was such a relief after the heat wave that has been stifling us. You could almost hear the garden greedily slurping up those much needed raindrops! It is still pretty warm though, and that got me thinking about this dish which my family loves to enjoy when that summer feeling is in the air and also in the colder months.

Cranberry and white chocolate crunchies

There is a very simple story behind this one. Last weekend we were invited to a Christmas picnic with some playgroup friends and I was asked to bring a plate of sweet eats to share. “Fantastic!” I thought, right up my alley. Crunchies are usually always a hit with adults and children, and the fact that I was having a crazy weekend and needed something I could make in a jiffy made them even more perfect. I have a wonderful basic crunchie recipe which I have previously adapted to make chocolate crunchies and today I wanted to share the Christmas version that I made for the picnic.

Cinnamon bread with cream cheese icing

Cinnamon monkey bread with cream cheese icing

Goodness me, when when did December sneak up on us? It has been busy as usual here at Cupcakes and Couscous HQ – rounding off campaigns, finishing up the school year and gearing up for a new school next year, Christmas shopping, not mention all the end of year get-togethers which are lovely but make for a very busy time. It is go-go-go and sometimes you just need a few carbs to keep you going! Today I bring you carbs, and then some.
