Goodness me, when did December sneak up on us? It has been busy as usual here at Cupcakes and Couscous HQ – rounding off campaigns, finishing up the school year and gearing up for a new school next year, Christmas shopping, not mention all the end of year get-togethers which are lovely but make for a very busy time. Spring seems to have settled in properly now, in fact it feels more like summer this week. Sunny skies, short sleeves and (ah-choo!) hay fever – happy days! Except for that last point, hay fever – feel free to be on your way any time now. That biting morning chill that we became accustomed to in the winter months has all but gone and the promise of a glorious summer is quite literally in the air.

Chocolate Easter nest cupcakes (with video)

Chocolate Easter nest cupcakes.
I suppose I should be used to it by now, but I could not believe my eyes when just one week after Christmas the supermarket shelves were already filling up with Easter eggs! Of course now that it is March you cannot maneuver your shopping trolley without bumping into a chocolate bunny but it is a bit more acceptable now that Easter is just a few days away, yay! A few weeks ago a friend sent me a photo of a beautiful Easter bird nest cake. It reminded me of some Easter cupcakes I made years ago, and I decided they would be perfect to make again and share with you this week. They will make a colourful and delicious addition to your Easter table!

Chocolate crunchies

 

Hello friends, it has been a while! Are we counting down to Christmas already?

The last few weeks have been a rollercoaster of ups and downs as we welcomed our new little boy to the world. It has been an absolute joy to enjoy newborn cuddles, watch the beginnings of sibling bonding and see good friends arriving at the door with a meal in their hands (a definite highlight)! Unfortunately though, we have also had to contend with an awful bug that has been hanging around us for weeks, on top of the expected sleep deprivation and exhaustion (what day is it?). Yet here we are, 6 weeks later and I can happily report that we are all adjusting and starting to settle into our new “normal”.

Orange drizzle cake with lavender

Oranges are in abundance at the moment and I love including citrus flavours in my baking. Particularly at the moment as I have been craving all things citrus for the past few months. Sneak a peak in my fruit drawer and you will find it packed with oranges, grapefruit and naartjies, I must have them! The inspiration for this recipe came a few weeks ago when I was at a family celebration. They served a delicious orange cake for dessert and, given my current citrus obsession, I have been looking forward to making one ever since.

A birthday celebration and carrot cake with cream cheese frosting

I started this blog a year ago, with the intention of sharing my favourite recipes and kitchen adventures. I had been mulling over the idea of having a food blog for quite some time before this, but kept putting it off thinking that no-one would read it, or that I would run out of things to write out. I am pleased, and relieved, to say that neither of those things has happened…in fact, little did I anticipate the adventure that lay ahead when I published my first recipe one year ago.
