Hi foodies! I’m back in the kitchen after a fabulous few weeks in the U.K. and Ireland. The family and I packed so much into our time there including lots of sightseeing (i.e. walking, walking and more walking) and time spent catching up with family. In terms of eating out the rand-pound exchange rate is eye-watering at the moment, so home cooked meals were the order of the day, with only a handful of restaurant meals in-between. That was just fine with me. I love a good old nosy around the supermarket shelves over there as there are always new and interesting products to discover and delicacies such as McVities Jaffa Cakes and Tony’s Chocolonelys to stock up on (if you know, you know).

Quinoa bowl with tahini dressing

 

This bright and wholesome bowl is a lunch I’ve been enjoying on repeat lately. It’s also great for picnics. Ever popular quinoa is very versatile, and in this bowl I’ve topped it with spiced chickpeas, crunchy carrots, tomatoes, crumbly feta and a nutty tahini dressing. It’s an incredibly satisfying meal and a nutritious way to elevate your salad game.

Rocket and goats cheese pesto pasta

 

It’s been one of those weeks where I’ve been drowning in admin and feeling like I’m being pulled in ten different directions all the time – it’s been hectic! The busy year end season has definitely started and now more than ever I need recipes that I can get on the table fast. Did I mention that they need to deliver on flavour too? A quick pesto pasta is definitely a great option for those crazy days (plus pasta = comfort food = happiness).

Movie night pizzas

 

Ah, I see the weekend on the horizon! We love Fridays around here. The end of the work week, no homework to worry about and a chance to kick back and engage relaxation mode. Friday nights are often movie night around here, and this pizza is regularly requested by the kids. As tempting as it is to rather pick up the phone and order in (and don’t get me wrong, we do that too!) this pizza is worth making from scratch and actually doesn’t require too much effort in terms of hands on cooking. It’s super delicious – perfect movie night food!

There is definitely a winter chill in the air! Bring on the boots, scarves, hot chocolate and cosy evenings by the fire, I love it all. Also, what better excuse to embrace comfort food (although if I’m honest I do that all year round) and dishes like this easy one pan chicken meal.

Quick creamy chicken pesto pasta

 

This week’s recipe doubles up as a quick midweek supper or a delicious lunch! I’ve used a zesty homemade basil pesto in this pasta dish along with sautéed chicken, cherry tomatoes and not forgetting the all important parmesan. This speedy meal is easy, filling and full of flavour.
