Plum squares

 

We are obsessed with stone fruit at the moment, especially plums. If only their season could be longer! We’ve been enjoying peaches, plums, mangoes and cherries in all sorts of recipes but mostly straight from the fridge – such an easy and delicious snack, especially when it’s hot outside. The end of season is fast approaching, and I wanted to get a quick plum recipe in before that happens.

Gingersnap crinkle cookies

 

What do you do when you find a jar of molasses at the back of the pantry? You grab your apron and whip up some ginger cookies! I love the depth of flavour that molasses adds to ginger flavoured bakes. I’ve also used muscovado sugar and crystallised ginger in this recipe and the resulting flavour is incredible.

Chocolate and pecan loaf cake

 

 

I remember baking and photographing this particular loaf on a grey and rainy winter afternoon. The chocolatey aroma wafting from the kitchen was just heavenly, and the wait while it cooled and was being photographed felt like forever. This simple chocolate loaf cake is a delight with its soft crumb and crunchy pops of pecan nuts, all slathered in velvety chocolate buttercream.

Cranberry cookies

I’ve been on the cookie train since lockdown started in March, and this is just one of the many recipes I’ve been playing around with recently. It’s been a while since I last posted a  recipe – the last few weeks have been a blur of school work and moving house (I know, superb timing) whilst keeping on top of my freelance projects. I’m sure many of you are also still finding your way in this new and strange reality. One thing we’ve all been reminded of though is that life is uncertain, so bake cookies with reckless abandon I say!
