Lemon and rose mini cakes

 

In my last post I mentioned that I’d visited Ottolenghi in Spitalfields during my U.K. holiday. Being the fan that I am I simply had to make time to pop in during my trip and as I walked towards the restaurant entrance the first thing I spotted was the iconic giant meringues in the shop window, along with a large selection of tempting and beautifully decorated sweet treats, just gorgeous. Inside we spotted a table laden with the most incredible salads and hummus that I could have just devoured on the spot. I spent a bit of time perusing the store before it was time to move on, and while I was there I bought a jar of rose petals. Inspired by the beautiful treats that I saw that day I decided to make some lemon and rose mini cakes and decorate them with a few of the petals.

Blueberry, banana and lemon loaf with tahini drizzle (GF, SF, DF)

 

A while back I posted a recipe for a paleo chocolate banana loaf that was very popular with readers, and since then I have been wanting to (and it’s not often that I say this) make a non-chocolatey version with blueberries. I’m rather pleased with the results!

Today’s blog post is dedicated to a classic bake, and can you get any more traditional than a good old Victoria sponge cake? Said to be named after Queen Victoria this regal cake is gorgeous in its simplicity. While I admire the multi-layered, brightly coloured, over the top cake creations all over my Instagram feed these days, you can still rely on the classics, like this easy lemon sponge cake, to be a crowd pleaser.

This week I am teaming up with Montagu Dried Fruit and Nuts to bring you some Mother’s Day inspired recipes using delicious dried cranberries. Earlier this week I featured a recipe for butternut, brie and cranberry tartlets, but today it is time for something sweet… how does a lemon, cranberry and poppy seed cake with yoghurt icing sound foodies? The other day my daughter came home from school and (after proudly showing me the red autumn leaves she had found in the playground that day as well as an energetic, full length rendition of “The Farmer in the Dell” – oh to be four again!) told me that her class had celebrated a birthday that day and that the birthday boy had brought a lemon cake to school for everyone to share. It made me think of this recipe which is one of those that I have had for years, scribbled on a piece of paper and unceremoniously shoved inside a notebook. It is a fantastic recipe and worthy of a more permanent home here on the web and not just on a scrap of paper!
