This flavour-packed chicken bake is my take on the classic French onion soup, transformed into a hearty, comforting winter meal. Juicy chicken pieces are first browned, then baked in a rich onion gravy before being topped with golden, bubbling Gruyère. It captures everything we love about French onion soup – sweet caramelised onions, rich savoury stock and plenty of melted cheese, but reimagines it as a family friendly dinner that’s perfect for cosy evenings.

Cheese and onion galette

 

I’ve been making lots of galettes these last few weeks, they are my favourite thing to bake at the moment! The buttery, flaky pastry is easy to work with and there are lots of different toppings and flavours to play with. I also love the perfectly imperfect nature of galettes, and their rustic appearance.

French onion soup (with video)

Bonjour! One the best things about the onset of Autumn and the chillier weather is that I get to eat soup all the time! Yes, I actually get rather excited about this. I try to make a couple of big batches of different flavours, and then freeze them in portions so that I always have some on hand for quick lunches. (If only I was that organised with all my meals!)
