This recipe came about quite simply because I had a surplus of egg yolks that had accumulated in my freezer after some recent meringue testing. Yes I could have made pasta or pastry, but I wanted something quicker and more simple – so cookies it was!
Lockdown baking is my jam right now. When I’m feeling overwhelmed or stressed because of our current lockdown situation I know that I can head into the kitchen, grab a handful of ingredients and simply whip, stir and bake my stress away – for a little while at least! For instant baking gratification you can’t beat a batch of cookies and they are my go-to treats at the moment. It’s almost December and after trying my best over the last two months to ignore the Christmas jingles on the radio and festive paraphernalia lurking at every turn in the supermarket I have decided to embrace the season. Yes folks, I am officially “feeling Christmassy”. Over the next few weeks I will be sharing some divine Christmas treats, so let’s kick things off today with a bit of festive baking shall we?
Cookie Swap 4 took place on the 2nd of August, and once again it was a national event that saw cookie lovers from around the country gathering together to exchange treats, socialise and most importantly raise money for Learn to Earn and specifically their Bake For Profit students who are in dire need of more kitchen equipment to assist with their training.
