I’m a total sucker for anything citrus, so I couldn’t resist leaning into those sunny spring vibes (hello sunshine!) and creating these light, lemony tartlets. They’ve got a buttery shortbread crust that melts in your mouth and a silky lemon curd filling that’s bright, zesty and just the right amount of sharp. It’s a flavour combo that feels fresh, elegant and seriously delicious.
This beautiful spring dessert is fit for high tea! Apple tart does require a little time and effort, but you’ll be rewarded with a show stopping treat. The base is a sweet shortcrust pastry that can be made in a food processor (love that) which is filled with creamy vanilla bean crème pâtissière. This is topped with slices of apple and an apricot jam glaze – an absolute treat.
Valentine’s Day is coming up and this lovely little dessert is perfect for the occasion. It’s inspired by an old chocolate tart recipe I made back in college whilst doing my food training, and I have adapted it by adding a decadent dark chocolate ganache layer and using my favourite sweet pastry recipe for the base. (And if making pastry from scratch for someone isn’t a sign of love then I don’t know what is!)
