Every now and then I’ll pop some aubergine on the table at home. I love it, but so far I’ve been unable to get the rest of the family on board with this veggie. If it’s tucked into some moussaka I might just get away with it, but that’s as far as I’ve managed to get!

An oldie but a goodie, aubergine parmigiana is a scrumptious side dish that I absolutely love. This is classic comfort food that’s perfect for serving to a crowd alongside a main meal, (although I’ll happily enjoy it for lunch with a fresh side salad too).

A few posts back I mentioned a fantastic new recipe book I had bought for myself. “Deliciously Ella” by Ella Woodward is a must have for your collection if you are following a vegan diet or simply looking for more plant-based inspiration when it comes to your meals. The book is filled with tons of tasty ideas and her recipes are simple and easy to follow  Although I have only had a chance to try a handful of her recipes this simple vegan Thai curry with chickpeas is definitely my favourite so far!
