
Let’s keep things fresh, light and romantic this week with an easy but luxurious strawberry and burrata salad that’s perfect for a Valentine’s Day lunch or dreamy summer dinner starter. This vibrant, colourful salad is gorgeous to look at, just a little bit indulgent but requires minimal effort in the kitchen. (Also… cheese!)



This romantic salad is a true celebration of contrast. Ripe, juicy strawberries and creamy burrata are a perfect match. Fragrant torn basil adds an aromatic note, and the peppery rocket base adds some bite to balance the sweetness. Drizzle with some olive oil and balsamic reduction to tie it all together and you have a dish where sweet meets savoury and crisp meets creamy – so stunning!

STRAWBERRY & BURRATA SALAD
- 30 ml (2 tbsp) shelled raw pistachios
- 40 g wild rocket
- 150 g strawberries, halved
- 120 g burrata (1 whole)
- 5 g fresh basil
- olive oil, to drizzle
- balsamic reduction, to drizzle
- salt and freshly ground black pepper
1.) Preheat the oven to 160ºC. Place the pistachios on a small baking tray and roast for 5 minutes. Leave to cool for a few minutes, then chop up roughly.
2.) Arrange the rocket on a serving plate. Top with the strawberries and place the burrata in the middle.
3.) Tear the basil leaves over the salad. Drizzle with olive oil and balsamic reduction, and season with salt and pepper. Tear open the burrata and serve immediately.
