These date truffles were an absolute hit when I made them at home, and with just a handful of ingredients you can whip up a batch in no time. The sweet date caramel and the dark chocolate pair beautifully, and they’re the perfect treat for when you need a quick sweet hit. You could also wrap them up for someone special, they make a gorgeous edible gift.

DATE CARAMEL TRUFFLES

  • 400g pitted dates
  • boiling water, to soak
  • 2.5ml (½ tsp) vanilla paste
  • 45ml (3 tbsp) peanut powder 
  • 100g 70% dark chocolate, chopped
  • 10ml (2 tsp) goji berries, finely chopped

1.) Place the dates in a bowl. Cover with boiling water and leave to soak for 10 minutes. 

2.) Drain the dates and place in a food processor with the vanilla extract. Blend the dates for a few minutes to form a smooth paste. 

3.) Add the peanut powder and mix again to combine. Transfer the mixture to a bowl and put in the freezer for 30 minutes to firm up. 

4.) Wet your hands slightly, and roll the mixture into twenty small balls. Pop them in the fridge for 30 minutes to set. 

5.) Melt the dark chocolate and dip the truffles in one at a time. Allow the excess chocolate to drip off before transferring to a piece of baking paper. Sprinkle the goji berries over the truffles before they set, or drizzle with leftover chocolate. Store in the fridge.
