
SUGAR AND SPICE CHRISTMAS PECANS
- 4 tbsp granulated white sugar
- 1½ tsp ground cinnamon
- ½ tsp vanilla extract
- 1½ cups whole pecans
- 1 egg white
1.) Preheat your oven to 160ºC and line a baking tray with baking paper.
2.) Place the sugar, cinnamon and vanilla extract in a small bowl and mix well until evenly combined.
3.) Place the pecans in a separate bowl. Whisk the egg white lightly with a fork, then add about half to the pecans. Toss well so that all of the pecans are coated with egg white, adding extra if needed. (You’re not likely to need the entire egg white.)
4.) Add the sugar mixture to the nuts and toss well so that all of the nuts are coated evenly.
5.) Spread the nuts onto the tray in a single layer and pop in the oven for 20 minutes. Remove from the oven and immediately transfer to a plate to prevent them sticking to the paper. Break them up as you go.
6.) Allow to cool completely before serving. Store in an airtight container.
