Pink party popcorn

Last month my daughter celebrated her 10th birthday – quite the milestone! It was so wonderful to be able to celebrate with friends again this year, after a very long break from social gatherings, and we hosted a tropical disco party complete with a flamingo cake to mark the occasion.

Pink was very much the theme colour of the food table, and the birthday girl asked if we could try making pink popcorn to include with the snacks. So followed a number of trials to create this recipe which I have to say is dangerously moreish! This crunchy snack has a sweet, buttery vanilla flavour that is hard to resist. It’s a very easy recipe to make, the hardest part is waiting for the popcorn to dry before you dive in!

A few notes before you start:

It’s important that you have your popcorn ready before starting on the sugar syrup.

The popcorn will keep in an airtight container for a few days, but it’s best when it’s fresh so do try and prepare it on the day that you plan to enjoy it.

You don’t necessarily have to make pink popcorn like we did. Choose any food colouring you like and customise your party popcorn to fit your theme.

  • Servings: Makes 10 cups
  • Print

  • 150g popped popcorn (approximately 10 cups)
  • 150g white sugar
  • 25ml (5 tsp) water
  • 60g butter
  • a few drops of pink food colouring
  • 5ml (1 tsp) vanilla essence

1.) Line a tray with baking paper. Place the popcorn in a large mixing bowl and set aside.

2.) Place the sugar, water, butter and pink food colouring in a small saucepan. Stir over a low heat to melt the butter and dissolve the sugar. Increase the heat to medium and allow the syrup to boil for 3 minutes, stirring occasionally.

3.) Take the pot off the heat and add the vanilla. Stir then pour the syrup over the popcorn. Working quickly, mix the popcorn well until it is mostly coated in the syrup. Tip the popcorn onto the tray and spread into a single layer.

4.) Leave to dry for 20 minutes, then enjoy!
