I hope you’re all settling into the new year and 2022 has gotten off to a smooth start! Personally, I’m still trying to get back into work mode, but it’s tricky with the kids at home on holiday. They will be returning this week though, and that means that lunch boxes will be added back onto the daily to-do list!
I’ve seen lots of activity online related to back-to-school and I recently ran a competition over on Instagram asking parents to share their lunch box tips and ideas. The response was great, and if you’re looking for some extra inspo do read the comments on this post. I thought it would be fun to round up a few of my favourite recipes that are perfect for lunch boxes. Feel free to leave your ideas in the comments too!
Muffins are always a popular choice with kids, and you can bake a double batch and keep them in the freezer to grab in the morning. Here are a few options:

5 ingredient honey and seed bars – sweet and tasty, and ideal if you are a fan of meal prepping/prepping ahead!
Chicken tortilla pinwheels – I love how these pinwheels tick protein, veggies and grains off the lunch box checklist, and you can make them the night before.
Crustless mini quiches – customise these cute quiches with your favourite roasted veggies, or use supper leftovers.
Hummus, tzatziki and tuna pâté – these can be whipped up in a jiffy and served in so many ways. Not to mention wholesome for the whole family.
Apple and cranberry muesli wedges – delicious slices that work brilliantly for lunch boxes and as an after school snack.
Chicken pesto pasta – when you need something substantial but tasty in your school or office lunch box then this is a fabulous option. Make a big batch for dinner, and enjoy the leftovers the next day.
