Coconut, pistachio and goji berry chocolate bark

 

Here’s a tasty little snack recipe to keep in your back pocket – homemade chocolate bark with toasted coconut, pistachios and goji berries. If you’ve never made your own chocolate before this is a must-try!

 

 

Making your own chocolate only takes a few minutes and the result is a melt-in-the-mouth treat that everybody will love. This smooth chocolate is made with coconut oil, sweetened with honey and topped with tasty and wholesome toppings. Not only is it utterly delicious but thanks to the good fats in the coconut oil, coconut flakes and nuts you will soon feel satisfied too. Yum!

 

 

Customise your chocolate with your favourite toppings, and keep a batch in the fridge for those times when a sweet craving hits. Happy snacking!

 

 

Cook’s notes:

  • You can get creative when it comes to toppings – think dried cranberries, chopped nuts, pretzels, popcorn and chopped dried fruit!

 

COCONUT, PISTACHIO AND GOJI BERRY CHOCOLATE BARK

  • 125ml (½ cup) coconut oil
  • 80ml (⅓ cup) cocoa powder
  • 60ml (¼ cup) honey
  • 30ml (2 tbsp) pistachios, roughly chopped
  • 30ml (2 tbsp) coconut flakes, toasted
  • 15ml (1 tbsp) goji berries

1.) Line a tray with baking paper.

2.) Combine the coconut oil and cocoa in a small pot over a very low heat. Stir for a minute until  melted and combined. Take off the heat and add the honey. Stir well to combine.

3.) Pour the mixture onto the lined tray. Sprinkle the pistachios, coconut flakes and goji berries over the top.

4.) Carefully transfer the tray to the freezer. Freeze for 30 minutes until set. Cut or snap the chocolate into pieces and store in the fridge.
