We’re keeping things simple this week with a beautiful but uncomplicated French dessert. Clafoutis, (pronounced kla-foo-tea) is traditionally made with cherries, but it works with lots of types of fruit. And don’t let the fancy name put you off – clafoutis is actually very simple to make. I decided to go for an apple version this time around, with plenty of cinnamon thrown in for good measure!
Apples are always available which means you can make this clafoutis all year round. I think it is an especially nice “change of season” pudding, and whether you are up north getting ready for winter or down here in the southern hemisphere like me enjoying the spring warmth you’re sure to enjoy a slice of freshly baked apple and cinnamon clafoutis.
The cinnamon apple slices are first caramelised in a pan and then baked in a vanilla batter (your kitchen will be smelling amazing at this point) for half an hour. The recipe is surprisingly simple and in no time at all you will have a gorgeous tart to serve for tea or at the end of your meal. Magnifique!
The first time we had this apple clafoutis at home my family (especially the kids) loved it so much that I had to make it again a few days later! - Baking time will depend on the size of your dish – a smaller, deeper tart will obviously need to bake longer than a larger, shallower one. Keep an eye on the tart and adjust the time accordingly.
APPLE AND CINNAMON CLAFOUTIS
- 1 tbsp butter
- 1 tbsp castor sugar
- 2 tsp cinnamon
- 4 apples (about 500g) peeled, cored and cut into thin slices
- 3 large eggs
- 50ml castor sugar
- 1 tsp vanilla paste
- 80ml (1⁄3 cup) flour
- 200ml milk
- 100ml cream
- icing sugar for dusting (optional)
- cream or ice cream to serve (optional)
1.) Preheat your oven to 180ºC and grease a 22cm (or slightly smaller) pie dish.
2.) Place the butter, castor sugar and cinnamon a small frying pan. Melt together over a medium heat. Add the apple slices and toss in the melted butter mixture. Cook for 3 minutes, stirring regularly until the apples have softened slightly. Set aside.
3.) Place the eggs and castor sugar in a separate bowl. Whisk until creamy and combined. Add the vanilla paste and flour and whisk together. Finally, whisk in the milk and cream.
4.) Arrange half of the apple slices in the pie dish. Pour the batter over the top, then arrange the remaining apple slices on top. Bake for 25-35 minutes until set and golden around the edges.
5.) Allow the clafoutis to cool for a few minutes. Dust with icing sugar and serve warm with cream or vanilla ice cream.
